First its a droid, with no human life froms on board. No one is going to be rushing to help. Second, all the Jedi would be inside, its not like they could rush out and stop the vehicle. No matter what, the truck is kriff, the only question is how much damage will it do.
If a car is driving and loses control and heads straight for a military guard tower, you bet your choobies the guard tower is going to open fire hoping to destroy a tire or something. The car (truck) is screwed, the only issue is how kriff up the temple is.

What? You mean birds? Can you detect birds on radar? Does the US Military shoot down birds when they go over the no fly zones in DC?

Inside the temple... not much good they can do from in there. 2nd They are droids, not sentients, there is no loss.
Your point about the shield is accurate however it also takes several seconds for the ship to break off from the traffic lanes and go for a collsion course on the temple. However if 1 did it the guy in charge may hold off on a few seconds watching to see what happens and activate too late. 7 however... ya that guy will press it the second he sees that. There is a reason why people transmit landing clearance etc...
Finally people grow attach to their characters or people under their command. I have only had "red shirts" under my command once and that was because they needed to die to move the story. (15,000 red shirts actually) We dont want to see a bunch of Jedi die anymore then we want to see a bunch of Rebels get killed in the movies/books (ie. if you support the Rebels). Remember I have the ability to void this whole thing sense me nor any of the people in the Jedi Temple want to be in this RP.
Oh, for your final paragraph, yes it may seem boring, I agree sometimes it gets boring, however we find things to do. Notice the original reply to your post was a simple "Sithspit happens, repairs occur." Some people prefer closed or preplanned RPs, I currently am in one now. This is why the traffic lights were made, If I could make planets a traffic color both me and San agreed that we want Coruscant to avoid major RPs like this, in other words an orange or yellow.
